Barbecue and other stuff I want to do; such as cast iron cooking and deep frying turkeys and fish.
I'm a family man. I enjoy cooking, it's fun, especially outdoor cooking. I'm doing this channel for fun. If it ever becomes not fun I'll quit doing it.
I'm not a professional chef or cook, I haven't been formally trained in culinary arts. I'm not a competition BBQ guy. Therefore, I don't have to impress judges or paying customers with my skills and meals. I only have to impress my family, if it makes them smile, then it makes me smile. I hope my videos will make you smile too.
Much of my equipment is very affordable. Many of my grills cost less than $100. For 5,000+ years of recorded history, mankind has cooked with wood and charcoal, so do I. Occasionally I cook with propane or electricity.

Je-Ne-Sais-Quoi Jambalaya: on a Wood Fired Rocket Stove
This is how I cook my locally famous jambalaya. In this video, I do it for the first time on my rocket stove from Patriot Metal Works & Smokers, and in my 5 gallon Cajun Classic Dutch Oven, using three varieties of oak wood. It’s a long process so this is a long video.

this video came at the perfect time, Big Lew. My old man just spent about a month in Baton Rouge and brought back some spices and rubs and whatnot and we're fixin to make some jambalaya. (We're from southern Ontario, Canada originally.) I don't have a rocket stove but I do have a barrel cooker and a dutch oven so we're gonna follow your method and try and make some legit jambalaya up north of the border. Been a fan of your channel for years now and you're still nailing it man! Cheers BL and all our big love from Alberta

I had the meat attachment for the Kitchen Aide mixer, great mixer, but the meat grinder stinks. I gave it away! This grinder did a clean job for sure. Burger press burgers! I was gonna say that is some lean looking meat,...but less fat makes it easier to process in the grinder too. It does help to keep the parts cold, that is why butcher shops are at a max of 50 degrees. Not a meat grinder out there that works well when warm. By the way, I did an unboxing video not too long ago dedicated to you! LOL God Bless You Brother, Great Video!

Hey big Lew, pretty neat product. I've seen videos where you can run a couple of slices of bread through at the end to clean most of the meat out and you can feed it to the dogs ??? Maybe a little more footage of stoking the fire. I have a Rocket Stove too. Mine is a 4" though. I like all your cooking equip. I also have a R410A Freon Tank Grill. I love that thing! Lol!! Keep up the gr8 vids. I live in Tulsa and its hotter than a stolen tamale here too!
@@DS-ss7vl sounds like you also have some good cooking equipment. As for stoking the fire, I decided to focus mostly on the recipe in this video. It wasn’t hard to do though, I just added another piece of wood as needed, it didn’t cause any real issues as opposed to the propane. Thanks for watching.
bad news fire dial does not work worth a snot, on a brisket , may be ok with chicken or burgers not big hunks of meat, sorry i don' agree with you , i dont cook burgers or chicken very often, but if i do it is on my weber grill.
@@wait4dl I haven’t used one on brisket, never even expected it to work for brisket. It’s designed to prevent flare ups. Which means it’s helpful for greased grilled foods like burgers or chicken pieces. I bought mine and I am not responsible for how the company markets it.

Nice short review, Big Lew!😁 I don't freeze anything, and I've never had any bacteria issues. I'm just grinding and using. Probably no time for bacteria to even think about growing. I also save the fat from briskets and pork butts to use when grinding or tallow. A meat grinder and a meat slicer are awesome to have! I know you'll love having that grinder!!!👍👍

Thanks for the review! I would recommend chilling of the cubed meat. 20-30 minutes in the freezer should be enough to firm it up. The benefit to doing this is it will be easier for the grinder blade to cut through the meat fibers instead of getting gummed up at the blade. This will also minimize heat buildup which will cause fat to melt in the auger chamber, blade and die (not good). For the small amounts (2-3 lbs) you are processing at one time, this should be good enough. My $0.02!

@@schlomoshekelstein908 you don’t have to eat a whole pack you could just do a couple. The point of this was for sharing with friends or family. You could do a couple hot dogs and a couple boiled eggs. Same method. As for better recipes I have a shrimp jambalaya recipe in a food jar. Is that any better?
I remember reading that bbqed pork steaks were popular in Missouri and not really anywhere else. But growing up and living in SW Louisiana, we always had pork steaks on the pit with chicken and sausage. I don't know what bbq sauce does basted to pork steaks, but it always had them melt in your mouth tender.

I think this (sun steeped) is a dying method of making tea. So it is a great that you shared this. I had to make 30 gallons (5 gal containers) of sun tea on the fantail of the destroyer I served on while in the Persian Gulf, the guys hated it because they had to carry it up the ladders to bring it to the galley! LOL Ice box is a term used in the North too. Your tea has some nice rich color about it. Great stuff!

How do Monument grills compare to Weber in Quality?
@@robertq809 I think Monument is trying to feel a gap in the market between lower end economical budget grills like Charbroil, and higher end priced grills like Napoleon. Weber has some lower priced models but also som really nice higher end stuff like Napoleon. Monument grills are not the quality of Webber’s top of the line stuff. They are also not priced like Webber’s top of the line stuff. Monument grills are good value, good quality, not top quality, fair priced not high priced.

No don’t ad water to the bowl. Folks have, but is a moist environment, since there is no exhaust. The WSM heat is generated by charcoal, and has an exhaust, the fire it is far less humid, and so water needed to be added. In this cooked meat produces its own steam.

I need to make some sun tea. I now know why I saved my gallon size pickle jar. Do quart size containers brew faster than gallon size? I read that you have to be careful with bacteria, but apparently that is not an issue. You made me laugh…We used cubic feet per long ton for density when determining cargo stowage factors on American flag vessels, so our brains thought in cubic feet when measuring volumes. We had a bad habit of continuing to use cubic feet when using metric tons on foreign flag ships. I knew better and made adjustments, but many did not. There was a 10% difference in the two tons, so the difference usually did not matter because the ships would usually reach their load lines before using up their volumes. However, when talking about 40,000 mtons and the ships trim, 10% was a huge difference. The foreign ship captains did not like it. When I started working ships small calculators, except for Texas Instruments, were not being made yet, so I used a slide ruler for quick calculations.
@@rickcormier9160 Wow that’s impressive math. I make my tea in a smaller quart or liter size for a few of reasons. One that really all I need for a day. It takes up less room in my fridge (ice box). The family size tea bags are designed to make a quart or a liter at a time. I would need four bags , or one of those big Red Diamond bags for a gallon. I have to fish the bags out of a gallon jar with a slotted spoon or tongs, as the gallon bags don’t have strings and the strings on the four quart bags are useless in a large gallon jar. It is easier to pour to from the small quart jar into a glass. If I’m making tea to serve to others, (company/guests) I do make a gallon and put it n a pitcher. Since I’m the only one who drinks unsweet I iced tea, The 1000ml/ 32oz is just fine for me each day.
